Shrimp & Broccoli Fried Brown Rice
Once your rice is cooked, this is a very quick and easy dish to prepare … you can also serve this dish inside a whole wheat tortilla if desired.
2 cups cooked brown rice
1 cup frozen or fresh broccoli, chopped
½ cup grated jack or cheddar cheese
1/2 white onion, minced
2 garlic cloves, minced
1 egg, beaten with a pinch of salt

Heat a wok-like saucepan and add the oil. Add the onion and garlic and sauté on high heat for two minutes.

Add the broccoli and sauté for a minute.

Add the egg and stir until the egg is cooked.

Add the raw shrimp and sauté for another minute.

Add the rice and cheese and stir well until heated through.
