During last year's Presidential race, he had a spot of skin cancer removed from under his eye.
The high public profile of skin-cancer patients like Cooper and Senator John McCain amplify the real but overblown threat of skin cancer from sun exposure.
In fact, that threat appears to be far outweighed by the overall anti-cancer benefits of vitamin D, which is generated when UV sunrays strike the skin.

Seafood is rich in selenium
Algae, seaweed, and aquatic plants absorb selenium and pass it up the ocean food chain to fish and shellfish.
In fact, ocean fish are the best food sources of selenium by far, exceeded only by Brazil nuts.

Now, adding another kind of cancer to the mineral's previously documented preventive potential (see the links at the end of this article), the findings of a new study suggest that selenium-rich diets may bolster protection from skin tumors.
Selenium and cancer
Selenium is developing a reputation as an anti-cancer nutrient, based on evidence from epidemiological and clinical studies.
Those findings could be explained by the mineral’s role in the structure and function of key immune system enzymes, though selenium's anti-cancer mechanisms remain unclear.

Omega-3s Linked to Lower Heart-Risking Inflammation
Finding adds weight to prior evidence that diets rich in omega-3s may lower levels of a protein associated with inflammation and higher heart risks

Health authorities worldwide recommend fatty fish and fish oil to reduce the risk of cardiovascular disease (CVD) and its adverse outcomes.
The adverse outcomes that omega-3-rich diets may help prevent include stroke and second heart attacks.
Omega-3s are most closely tied to prevention of “sudden cardiac death”, which is usually caused by arrhythmias (erratic heartbeat) and accounts for half of all heart-related deaths.

In recent years, a new signal of risk for heart disease has emerged, called C-reactive protein or CRP.
Blood CRP levels rise when inflammation levels rise throughout the body. We still do not know whether CRP is simply a sign of cardiovascular disease, or if it actually plays a role in causing it.

Why would reducing inflammation levels help reduce the risk of heart attacks and other adverse heart events?
Inflammation promotes the buildup of arterial plaque, and it can cause the “cap” that encloses arterial plaques to rupture and release fatty clots into the bloodstream, causing a heart attack, ischemic stroke (the most common kind), or sudden cardiac death.
Annual physical exams include tests for blood levels of cholesterol and triglycerides, and most now include a test for CRP levels as well.

Cooking Fish Over Fire: Our Guide to Great Grilling
Prep and grilling tips; The pros and cons of fuel sources; Some food safety considerations

Fire brings out the best in fish, and to facilitate your fish-over-fire adventures, we offer some basic tips. It's easy to grill fish to perfection, as long as you don’t get distracted, and forget to take it off the fire!
We hereby present our best guidance on cooking fish on the grill ... as well as some tips for making grilling as safe and green as possible.
General guidance
- Fish with an abundance of natural oils—like King or Silver Salmon, Sablefish, and Mackerel—are least likely to stick. To retain the moisture in leaner wild fish and seafood such as our Sockeye, Scallops, Halibut, and Albacore Tuna, brush it lightly with Olive or Macadamia Nut oil before cooking.
- Fish grilled with its skin on—such as our Sablefish, Silver Salmon, and Sockeye fillets—is protected from the direct heat by the skin and may be easily separated from it with a spatula when cooked.
- Marinating has its advantages (see “Safety”, below), but an herb-spice “rub” often yields fuller flavor. You can make your own herb-spice rub mix, but our Organic Salmon Marinade and Organic Lemon-Pepper blends make great choices. Measure out about a teaspoon of mix for each fillet, blend it with a few drops of oil (just enough to moisten it a bit) and spread the resulting herb-spice “mud” on the fish. Or,
rub your fish with the herb-spice mix, and then spray or brush each fillet with a little oil to prevent sticking.
- Use Cedar or Alder Grilling Planks to impart a rich, smoky flavor while keeping fish wonderfully moist with no trace of charring. We offer our cedar planks separately, and as part of our three Sampler Packs.
10 steps to grilling seafood successfully...
One big secret to grilling success is advance planning. Run down our checklist of preparation items so that your guests aren’t kept waiting!
- Thaw fish well ahead of time. If you forget to leave frozen fish in the fridge overnight, the safest way to speed things up is to immerse the fish, still in its vacuum pack, in a dish of cool water for about 30 minutes; it is thawed as soon as it is flexible. (Pat the fish dry before applying any marinade).
- Try to avoid putting fish on the grill cold, straight from the fridge, lest the exterior overcook before the interior is done. To promote more even cooking, remove thawed fish from the fridge 20 minutes or so before grilling.
- If you want to use a marinade, immerse the fish in it fully for at least 30 minutes, and soak up any excess with a paper towel before grilling, to reduce flare-ups. (Note: Instead of marinating, it's equally or more effective to rub marinade seasonings directly onto lightly oiled fish.) Fish should not be left in acidic ...

Herb Crusted Salmon
Salmon and herbs go together very well, as the robust flavor of the fish is enhanced and will not be overshadowed by seasonings.
Ounce of ounce, herbs and spices provide unequalled levels of antioxidants, making them perfect health-mates for the antioxidants, omega-3s and vitamin D in salmon.
Herb Crusted Wild Salmon
This easy, tasty recipe is adapted from one by “Katie” on her goodthingscatered blog … the cayenne is optional, of course!
8 Tbsp. lemon juice
1/2 tsp tarragon, finely minced
1/2 tsp parsley, finely chopped
1/4 tsp ground mustard seed

Heat heavy sauté pan over medium high heat and set broiler to low.

Add olive oil to pan and swirl to coat.
-
Add salmon (skin down, if using our silver salmon portions) to hot pan and cook for 2 minutes.
-
Season top of steak with herbs, garlic, and salt and ground pepper.
-
Flip salmon in pan and cook for another 2 minutes.
-
Remove skin from bottom of salmon (if using our silver salmon portions) and discard.
-
Add lemon juice to pan and swirl to coat.
-
Put pan under broiler and cook 3-4 minutes, until heated through and fork tender.

Flip salmon in pan and swirl to pick up browned bits in pan halfway through.

Remove pan from oven, flip and swirl on bottom of pan to pick up juices and transfer to plate.
