New Mediterranean Pyramid Favors Fish

The folks behind the Mediterranean Diet Pyramid just revised the popular, science-based eating plan to recommend more fish, herbs, and spices.
 
The changes reflect recent research that’s helped explain exactly why the sunny coastal region’s healthiest diets reduce rates of disease and lengthen life spans. (To compare the old and new pyramids, see “Fish, herbs, and spices ...”, below.)
 
In truth, what we now call the “Mediterranean” diet actually describes an idealized version of the diet enjoyed by Aegean islanders until American-style foods started to invade their shores in the 1970s.
 
This proven-healthful version of the Mediterranean diet is rich in green vegetables, fruits, nuts, beans, fish, and olive oil, and has been linked to longer life, less heart disease, and protection against some cancers.

Magnesium May Cut Stroke and Diabetes Risks
Higher blood levels linked to 25% cut in risk of stroke and reduced diabetes risks; Benefit attributed to fish-borne mineral’s effects on blood pressure and metabolism

New findings indicate that increasing magnesium intake could curb the risk of ischemic stroke.
 
The researchers linked this apparent deterrent effect to magnesium’s potential power to help stabilize blood pressure and improve key risk factors for diabetes.
 
Ischemic (i-skee-mik) strokes are the most common kind by far. They occur when blood vessels narrow in the brain, causing a clot that deprives the brain of blood and oxygen.
 
Artery narrowing is associated with the arterial plaque buildup known as atherosclerosis, which can also lead to heart failure, heart attack, or sudden cardiac death.
 
Dietary factors including low intake of omega-3 and high intake of omega-6 fats affect the risk of ischemic stroke, and the strongest association is with between high sodium intake, which also raises blood pressure, a key risk factor for stroke.
 
In contrast, diets high in magnesium, potassium, and calcium appear to lower the risk of developing high blood pressure (Lee S et al. 2009).
 
And it may be no coincidence that diets high in magnesium have been linked to reduced risk of atherosclerosis and cardiovascular disease (Ma J et al. 1995).

Vitamin D Seen to Stall Pre-Diabetic Syndrome
Population studies link low vitamin D blood levels to 52% higher risk of pre-diabetic metabolic syndrome

According to the American Heart Association, more than 50 million Americans have metabolic syndrome a cluster of signs linked to a greater risk of developing cardiovascular disease and type 2 diabetes or suffering a stroke.
 
Metabolic syndrome is defined as having three or more of these half-dozen metabolic signs, most of which are linked to junky diets and sedentary lifestyles, with genetic influences at play as well:
  • Abdominal obesity (excessive fat tissue in and around the abdomen).
  • High blood triglycerides, low HDL cholesterol and high LDL cholesterol: a state that fosters plaque buildups in artery walls.
  • High blood pressure.
  • Insulin resistance or glucose intolerance (i.e., the body can’t properly use insulin or blood sugar).
  • Sticky, “pro-thrombotic” blood that can promote dangerous clots (e.g., high fibrinogen or plasminogen activator inhibitor–1 levels in the blood).
  • Pro-inflammatory state (e.g., elevated C-reactive protein in the blood).
This cluster of risk factors is linked closely to growing worldwide epidemics of cardiovascular disease and diabetes.
 
And recent research suggests that lack of vitamin D may promote metabolic syndrome.
 
Ten years ago, researchers from Britain’s Institute of Metabolic Science in Cambridge recruited 524 non-diabetic men and women aged 40-69 years, tested their blood chemistry, then tested it again 10 years later.
 
After adjusting for age and other risk factors, they found that the participants with the lowest vitamin D levels were the most likely to have developed two key components of metabolic syndrome high blood sugar and insulin resistance which are the key warning signs of developing diabetes. The authors of a joint Anglo-Chinese study report that deficient levels of vitamin D may increase the risk of metabolic syndrome by 52 percent.

Tuscan Salmon Pasta with Beans

Beans are perhaps the most underused, overlooked food in the American diet … and key reason why the Mediterranean diet is so healthful.

 

In addition to fiber, protein, minerals, and B vitamins, beans are rich in resistant starch, which blunts the blood sugar impact of any meal that includes these tasty legumes. This desirable effect can last for eight to 24 hours.


By rinsing pasta quickly in cold water, you convert some of its starch into the resistant kind, while reducing greatly the tendency of pasta to become gummy and sticky. (This starch conversion also occurs when you refrigerate cooked pasta immediately.)
 

Unbeknownst to many, colorful beans are also rich in the beneficial polyphenol antioxidants abundant in colorful fruits and vegetables.

 

To add color and antioxidant power to this regional Tuscan dish – at the price of Italian authenticity – you could substitute or add red, black, or pinto beans.
