Vitamin D, Weight Control, and Dieters’ Heart Health
Findings do not position vitamin D as a “diet pill”, but support growing evidence of the nutrient’s broad influences on basic metabolic processes.

No evidence supports the efficacy of drastic calorie-cutting, which is proven unhealthful and rarely yields lasting results.
 
Nor do studies suggest there are any advantages to diets weighted heavily toward carbohydrates, protein, or fat.
 
Instead, the most effective approach to weight loss is portion control, practiced with moderation.
 
That said, everyone is interested in gaining every edge they can in the battle of the bulge!
 
Key Points
  • Higher vitamin D blood levels were linked to greater weight loss among people on very low calorie diets.
  • Findings fit with associations between higher vitamin D levels and reduced risk of being overweight.
  • Two prior studies found no weight loss from taking supplemental vitamin D, in the absence of reduced calorie intake.
  • German study in dieters supports prior indications that vitamin D is heart-healthy.
So we noted with interest a study suggesting that higher blood levels of vitamin D may improve weight loss among folks on very-low-calorie diets.
 
And when we found that some evidence links low vitamin D levels to increased risk of obesity, we though it was worth another look at the hypothesis that vitamin D might influence weight loss or gain.
 
Report links vitamin D to greater dieting success
The findings that caught our attention were presented last week at the Endocrine Society Meeting in Washington, D.C. by Shalamar Sibley, M.D., Ph.D., of the University of Minnesota.
 
Vitamin D shares many properties with hormones, so it made sense that there were many presentations regarding the “sunshine-and-seafood” vitamin at a conference where hormone-science researchers gather to share their results.
 
Dr. Sibley's Minnesota team recruited 38 overweight men and women and assigned them to restricted diets that provided 750 calories a day fewer than their estimated total needs.
 
The study lasted for 11 weeks, and the participants’ blood levels of vitamin D were measured at its start and finish.
 
Dr. Sibley told meeting attendees that many of the subjects were vitamin D deficient or had insufficient levels of vitamin D at the outset of the trial.
 
Significantly, the participants’ blood levels of vitamin D at the beginning of the study accurately predicted their success in losing weight, with vitamin D levels linked to weight loss in a linear relationship.
 
Better yet, having higher vitamin D levels at the beginning of the trial predicted increased loss of abdominal fat: a particularly heart-unhealthful kind.

Study finds beneficial blood-fat effects from both omega-3 sources; Nuts’ heart benefits may flow as much from other nutrients as from their “weak” omega-3s

Loma Linda University sits about 40 miles east of Los Angeles, amidst Southern California’s nut-growing region.
 
This respected health sciences institution was founded in 1905 by the Seventh-day Adventist church, whose members strive to eat diets high in whole plant foods and low in refined foods and meats.
 
Unsurprisingly, epidemiological (diet-health) studies find that Seventh-day Adventists rank among the healthiest people in North America.
 
The Adventists’ uncommon diets combined with generous funding from various California nut-growers’ groups have helped make Loma Linda University a leading center for studies on the health effects of nuts.
 
Key Points
  • New study compares blood-fat effects of walnuts and salmon.
  • Walnuts and salmon produced different beneficial impacts on blood fats.
  • In addition to “weak” omega-3s, the heart benefits of walnuts may flow from other factors.
These studies suggest that nuts are hearth healthy, probably due to three major factors: fiber, antioxidants, and polyunsaturated fats.
 
Funding-source induced bias does not appear to be a factor, since many studies from other institutions support these findings.

And in 2007, researchers from Harvard, Spain, Loma Linda, and Penn State published an analysis review of four U.S. epidemiological studies, as part of a USDA-sponsored scientific symposium on nuts and health.
 
Their analysis showed that people with the highest nut intake are about one-third (35 percent) less likely to die from coronary heart disease (CHD), due primarily to a decrease in sudden cardiac death … the same kind of heart-related death that fish oils appear to deter most effectively.

Vital Recipes
Walnut Stuffed Salmon
Makes 4 servings.
 
1/4 cup minced onion 
1 clove garlic, minced  
4 cups chopped spinach 
1 cup cooked brown rice
2 tsp lemon zest 
1/4 cup shredded aged cheddar cheese 
1/2 cup chopped organic walnuts 
1 lb of wild Alaskan salmon fillet, sliced lengthwise into four equal pieces (or four 6 oz fillet portions, sliced in half widthwise if needed to allow easier rolling)
  • In large non-stick skillet, heat oil over medium heat. Add onions; cook until tender but not browned, about five minutes. Stir in garlic, spinach, salt and pepper and cook just until spinach starts to wilt, about three minutes. Remove from heat.
  • Add cooked rice to spinach and stir in lemon zest until well combined. Spread spinach mixture evenly over salmon and sprinkle with cheese and walnuts.
  • Roll up gently using toothpicks or butcher’s twine to secure.
  • Place salmon on a parchment lined rimmed baking sheet and bake in 375ºF (190ºC) oven until fish is cooked through, about 15-20 minutes.
  • Transfer to cutting board and let rest 10 minutes before slicing. Serve with steamed seasonal vegetables or green salad.
