Cows' Climate-Warming Gases Cut by Grassy Diet
Cut in greenhouse gas emissions linked to higher omega-3/omega-6 ratio in grasses vs. grains; Grass feeding also boosts nutritional value of milk

One year ago, we began offsetting the climate-warming carbon emissions associated with shipping our goods to Vital Choice customers.
The project we supported through June of this year trapped the climate-warming methane emissions from dairy cows at Pennsylvania’s Brubaker Farm, and burned them to generate power.

Now, the organic yogurt makers at New Hampshire’s Stonyfield Farm have announced a project to reduce methane emissions from cows … greatly lessening the amount of this greenhouse gas that cows burp up in the first place!
Grass fed dairy cows proven to produce less warming gas
Stonyfield Farm, a major organic yogurt maker, is running the first program in North America to naturally decrease global warming gases caused by cows’ burps (enteric emissions).
“This is a watershed moment for the US dairy industry,” said Stonyfield President/CEO Gary Hirshberg. “By changing the feed we give our cows, we can simultaneously reduce greenhouse gas emissions and improve milk’s nutritional content in a way that may help reduce cardiovascular disease and obesity.”
The Stonyfield Greener Cow pilot program began in late 2008 with 15 Vermont Organic Valley farms which supply the milk for Stonyfield’s yogurts. The company learned about this approach from its global partner French-based Groupe Danone.
Stonyfield had been measuring its carbon footprint for over a decade, and had known milk production was the biggest part of its footprint. While it developed programs for emissions from growing feed for cows, manure, transportation, and farm energy, handling its greatest source of milk emissions, the natural digestion of the cow, was a challenge.

Our Tuna Fits Philly Foodie's Quality Criteria
Chef/author describes the ideal canned tuna … and ours fits the picture perfectly

Today’s Philadelphia Inquirer features an eye-opening article on canned tuna by noted area chef and food writer Aliza Green.
Ms. Green has been chef at a number of Philadelphia-area restaurants and is the author of several cookbooks, including “Starting with Ingredients: Quintessential Recipes for the Way We Really Cook” (Running Press, 2006).
She researched the various types and grades of canned tuna and then sampled and compared 19 different brands.
They ranged from cheap, national supermarket brands of chunk light tuna to hand-filleted, hand-packed, sashimi-grade, single-cooked albacore loins … just like ours.
Her findings and taste test elevated the very kind of tuna we sell: certified-sustainable, hand troll-caught, North Pacific albacore tuna that's smaller in size for optimal purity, and cooked just once for best taste and nutritional value.
We thought you’d be interested in some key quotes from Ms. Green’s article, which appeared under the heading, “What to Look For”.

Grilled Salmon Salad with Vinaigrette
This time of year, those of us in the more northerly US climes are drawn to the grill, inexorably, to savor the limited days of warm outdoor glory.
Of course, you can also cook the fish under a broiler or in a skillet ... while the flavor won't be identical, the cooking time should be about the same as on a grill grate.
Grilled Alaskan Salmon Salad with Vinaigrette
Prep Time: 30 minutes Cook Time: 12 minutes
Makes 4 servings
Dressing
1/3 cup organic extra virgin olive or macadamia nut oil
1/4 cup balsamic vinegar
1 Tablespoon Dijon-style mustard
1 clove garlic, pressed
Salad
1 large apple, cored and chopped
1 ripe avocado, peeled and chopped
1 Tablespoon lemon juice
1 package (10 oz.) prepared salad greens
1 navel orange, peeled, seeded, and chopped
1/4 medium red onion, sliced very thin
1/3 cup slivered organic almonds
1/3 cup raisins
4 (6 oz. each) wild salmon fillets
2 teaspoons organic extra virgin olive or macadamia nut oil
Sea salt
Organic black pepper
This recipe can made using a grill, a heavy nonstick skillet, or a ridged stovetop grill pan. If using a charcoal grill, start the coals before proceeding.
- Mix dressing ingredients in small bowl; set aside. Place chopped apple and avocado in a large salad bowl. Drizzle with lemon juice. Add salad greens, orange, onion, almonds, and raisins; mix.
- Rinse salmon under cold water; pat dry with paper towel. Heat a heavy nonstick skillet or oiled, ridged stovetop grill pan over medium-high heat. Brush both sides of salmon with oil. Place salmon on oiled grill grate OR in heated skillet and cook, uncovered, 3 to 4 minutes. (Shake pan occasionally to keep fish from sticking.)
- Turn salmon over and season with salt and pepper. (If using a pan, cover it tightly and reduce heat to medium.) Cook salmon an additional 3 to 4 minutes, until fish is opaque throughout.
- Divide salad among four plates; place salmon portion on top of each. Drizzle with vinaigrette dressing.
Nutrients per serving: 640 calories, 41g total fat, 6g saturated fat, 57% calories from fat, 126mg cholesterol, 40g protein, 30g carbohydrate, 8g fiber, 209mg sodium, 118mg calcium and 1.4g omega-3 fatty acids.
